
French Bread
Ingredients
3 3/8 t yeast
2 1/2 c. Water lukewarm
2 t honey
1 3/4 t salt
3 c ( may need up to 1/4 c. more) gf bread flour
2T -1/4 c. Flour for later
Instructions
- Mix yeast, water and honey in either a mixer or mixing bowl
- Add 1 c. Flour and salt. Mix well.
- Add rest of the flour and mix until it is able to be mixed and form a loose dough. Should be able to mix the bottom and it will pull away from the bowl
- Put in a bowl and cover with plastic wrap
- Put in a proofer or warm place in the kitchen and allow to double in size 25 minutes -1 hour. The colder it is the longer it will take to rise. Don’t go over 100 degrees on proof. The yeast could die
- Put dough on a well floured surface . Punch dough down. Add 2 T- 1/4 c. Flour and knead until it forms a dough. May be slightly sticky. Put on parchment paper and score dough
- Cover the dough with a clean dish towel. Allow to rise until it’s 1 1/2 times the size. Check after oven preheats. About 15 minutes
- While the dough is rising take a Dutch oven or another oven safe pot with a lid and put it in the oven. Set the oven to 460.
- Take Dutch oven out of the oven. Use oven mitts it will be hot. Place bread that is on parchment paper in the Dutch oven and place back in oven with the lid on
- Bake 40 minutes. Drop oven to 425 degreees
- Remove lid and allow to bake 10 more minutes.
- Take out, put on a wire rack and allow to cool completely
